This dressing is delicious with a crisp green salad with crunchy croutons but, as with most delicious things, is often a bit naughty and not listed on many diets. My version is a little bit less fat heavy but no less indulgent.
2 tbsp 0% fat Greek yoghurt
1 square inch of Parmesan
1 tsp white wine vinegar
1 1/2 tsp anchovy paste
1 1/2 tsp finely chopped garlic
3 tbsp olive oil
salt and pepper
1/2 lemon's worth of juice
Mix everything together until nicely blended!
Season to taste with salt, pepper and lemon juice and add more oil of you prefer a looser dressing for your salad.
